Are you following through on your swings? I know that this sounds like obvious advice but when I remind myself to actually follow through instead of flicking my wrist, I tend to be more accurate.

Apparently using the nunchuck to control your play isn't the smartest thing. So my first recommendation is ditch it.
Also, from what I've heard, you need to hold the racket back at centre (like a proper player) after you a take a swing, or else the control goes into a spasm thinking you swung when all you did was forgot to center the wii-mote.
And you have to use motion+

I think I am following through. However, I just can't seem to get the ball where I want to although that seems to be improving a bit. The shot I am struggling with is when I am at one end of the court and want to hit the ball straight. The ball always seems to go diagonal right back to where my opponent is.

I went straight in with nunchuck for two reasons. First, I felt like the wii remote only mode is for new gamers. You know, those that only use their Wii as a Wii Sports and Carnival Games machine. Those folk hated and laughed at by the PS360 brigade. Well I didn't want to be laughed at.
Second a few people said playing without the nunchuck meant your player won't get into the right position and the game would think you are doing a backhand when you want to do a forehand and vice versa. Will give it a go and once I have mastered my ball placements I will graduate to using the nunchuck as well.

Do you know how to put spin on the ball? It's very similar to real tennis in that way.
A downward swing does a slice and an upward swing puts top spin on the ball. It is a little tricky to figure out exactly how to do it.
Also where you are in your swing when you make contact with the ball is a factor.
