Hmm. Well, I don't care much about the multiplayer modes, so I'll see if I decide to get them for Xbox or for GC. The one that's available for 360, I'll probably get for 360 though.
I played the original on the GC. It was a great game, and I had a lot of fun with it. You play as a spy. You sneak around in the dark, shoot out lights, and collect the information that you need for the mission. Some missions allow you to kill the people you come across, other missions you are not allowed to kill anyone. You get a lot of cool gadgets to play with, too. The story is decent, and you can pick up extra bits of information along the way by searching computers and the guards that you down.
I don't know about the sequels on the GC, but the first one looked great and had no glitches.

I was impressed by the demo at E3 as well and I'm looking forward to trying it out. I have one of the GC versions, but never finished it. This one looks way more exciting.

If you don't care for multiplayer, I'd go with the Gamecube version, as while the Xbox versions have better graphics, they'll also likely have emulation issues on the 360.

I have all three and play them on the 360. There's no noticeable issues with any of them. Get the Xbox versions Majin.

I couldn't disagree more. The series was worst on the PS2 because of the graphical capabilities of the system based on the Xbox port. The GC game looked better. In many games, this doesn't really matter but in the SC series, you'll use shadows A LOT and if the system isn't doing a good job of rendering them, it will piss you off.
Skip Pandora Tomorrow. If you want to get into the series, stick with the Ubi Montreal games, which are the original SC and Chaos Theory. Those are far and away the best of the series.
I'm a huge SC fan, BTW. I'm kind of getting excited about Conviction now that they finally showed more of the gameplay.
edit: Oh, the OP has a 360. Buy the Xbox versions. Don't even consider any of the others.
BTW, Double Agent had it moments even though it wasn't a Ubi Montreal game (which Conviction is). The Shanghai level is one of the best SC levels in all of the games. Unfortunately, great levels like that are mixed in with absolute crap levels where you sneak around as the double agent. Overall, a pretty meh game.

Hmmm. Sounds like the Xbox version is the best and the GC version is only slightly worse.
Thing is, I've got the Gamecube on my room and that way I can play them whenever I want - The 360, on the other hand, is in our living room so I can only play when I won't bother the rest of my family, or when they aren't using the room. That's what makes me lean more towards the GC versions.

There's the compatibility list. All of them are there (They start with "Tom Clancy's"). From reviews the Xbox ones seemed to play and run the best. I'd say the best ones (in order) are Chaos Theory, Stealth Action Redefined, Pandora Tomorrow and then Double Agent. I didn't like Double Agent at all - it was way too different than the other ones and not in a good way. When they showed Conviction a few years ago when Sam was emo I all but gave up on the series until they showed Conviction this E3. It looks like it could challenge Chaos Theory for the top spot in the series.
I'd say the only comparable series gameplay wise is MGS but even that's a fair stretch. MGS feels very clunky because of Snake's animations during gameplay. SC is a lot smoother and Sam will change his stance based on what you're doing. Sneaking up on a soldier from behind? Sam will reach for his blade. I prefer the SC games more gameplay wise as they're quite intense. You could be hanging upside-down on a pipe right above of a guard and he's just whisteling away - it's quite brilliant.
