They do actually put a small amount if information on their website about some things they don't use, some of them I believe are part of Greenpeaces survey too, but rather than try to gather the information Greenpeace wanted Nintendo to just give it to them.
There is also the fact that Nintendo outsources for all their components, quite a lot of different companies make parts for the Wii and DS... often 2or 3 companies are making exactly the same parts.... A lot more difficult than for Sony who do the majority of stuff in-house, so they know what goes into their components. The PS2 early production problems were in part due to a lack of a specific (and I believe environmentally dangerous) component that I think may have been part of the Emotion Engine (someone may have to correct me if I get any of this wrong).... it was also something to do with Africa but I have clearly forgotten the details.
