Pokemon, no contest. I've sunk at least a thousand hours into the series, and I still keep playing.
Diablo 2, some RPGs and TBS games are also contenders, but those games don't hook me for more than a few months at a time, at worst.

damn, if i really had to pick, it is a tie between pokemon blue and super smash bros for n64. i spent countless hours playing those two games. gears of war is creeping up there now though for my most addictive game ever.
