Early Lucasarts stuff: The Monkey Islands, The Manic Masions, Full Throttle, Sam and Max
The whole Space Quest series
The original Bauldars Gate for space hampsters and the like
Dungeon Keeper2 for disco inferno
Humor centric games are pretty much a thing of the past. Its a shame really.

Fallout 1 & 2 and Planescape Torment had some pretty dark humor as well.



Knights of the Old Republic: Everything that the HK-47 says is pure comedy gold.

Earthbound, Final Fantasy IX (ooh, soft and the *tinkle* moments are awesome)

Ratchet and Clank is also good.

And Jann made Valkyria Chronicles hilarious.
