Doesn't really bother me, assuming I haven't played a ps3 game in at least a few days. Even then, it's the resolution and aliasing that bothers me, and not really the polygons, textures, etc.
If I start playing Uncharted will in the middle of playing FFX or something, when I go back to FF, I can't help but think how blurry the game looks.
You should try tweaking the sharpness\contrast\brightness on your TV for PS1\2 games...
Will make a big difference, they were not really designed for playing on plasma\LCDs and lowering the sharpness for a start will help a LOT.
(At least I found this to be the case when playing FFIX on my 50 inch panasonic plasma on the PS2 a few days back)...
I still play many PS1 and PS2 games and some of them frankly still look fantastic especially when you consider what they were on and for their time.

I can't play PS1 games due to the graphics being so bad.
PS2 games hurt, but I can play them.
I'm used to the top-notch graphics the PS3 produces and going backwards is hard.
Graphics matter A LOT to me. I won't buy a game due to the graphics but I will not buy a game if the graphics are under average.

PS1 games have not aged well. I still play them. I own RE 1, 2, 3. RE1 and Silent Hill look awful by today's standards. PS2 games were a step up but the graphics can't match today's consoles.
I still play PS2 and PS1 games on occasion.
They don't bother me at all. Why should they?

Does it also depend on the TV? I have a 40" HD and i try to sit far back when i play ps1/2 games, but with mgs4 i can sit 2' away and it still looks great!

It's when reading that that I understood what you meant. I think you're right by saying that the SNES looks less outdated than the PS1 because most games were full of colors and pretty well drawn. However, I have to admit that the PS1/N64 generation hasn't aged that well. I played Mario Golf 64 recently on a 42 inches TV and I thought it looks like shit. It still looks good on a smaller TV so it may be that your TV has too much details. It would be like playing a VHS on your HD TV, it wouldn't look so good...

I can make exceptions for games with outstanding gameplay that make me forget to care about the graphics, MGS and God of War for example.
