Pacing.

It's a concept which is hard to define, and even harder to perfect, but basically it means ramping up the challenge, tension, and/or narrative in a game smoothly rather than bouncing them up and down in sharp spikes.

I typed this before scrolling up to see Rubang's post. Now I feel derivative.
