Well, the thing is, I haven't heard of any good point-and-click games in a while. Grim fandango has piqed my intrest though.

Sam and Max is excellent. Homestarrunner is supposed to be too, although not all the reviews are in yet.
If you want hard puzzles:
Runaway: A Road Adventure
I'd recommend Sam and Max (both the old game and the new episodes), but it's nothing like any of the games you listed. If you're wanting to broaden your tastes a little and you like witty repartee and satire, you'd like it. If you're willing to wait a little while, SBCG4AP is even funnier IMHO.
I've heard good things about The Longest Journey. I can recommend the Gabriel Knight series, especially the first. Not so much the third, though. It sort of suffers from Simon 3D syndrome.
Myst like, hrmm...
If you just want straight up puzzles, Entombed is pretty good (though strictly not an adventure).
Heart of China kind of has a Myst perspective. It also has cheesy dialogue, a corny storyline and overacted (hammy!) characters.
The Last Express has a sort of Myst-ish perspective and features rotoscoping. It's greatly replayable because the environment changes depending on how you interact with characters, and the game branches very frequently. Moreso than in most other adventure games I've played. Also, it's by the Prince of Persia guy.
Finally, Murder on the Orient Express was one I enjoyed recently. The Agatha Christie games feel a bit cookie-cutter, but they have good stories that work well as very linear games. If you want a quick game, I'd recommend one of those.

Ankh and its sequel Ankh: Heart of Osiris
The Secret Files: Tunguska (available for PC, Wii & DS)
Future releases: A Vampyre Story (supposedly the biggest international p&c adventure since a long time - especially for fans of classic LucasArts games), Perry Rhodan, Ankh: The Battle of Gods (German versions of these two already released), Secret Files 2, Whispered World and many more.
General recommendation: adventuregamers.com is the best international site I've found for reviews and it has a good list if upcoming releases.

that will be bad on the Wii... I'm sorry but the game will be so hard to play plus I doubt it would sell due to it not having Nini on the label and it's general theme.

But if - judging from your original post - you're more into Myst-style adventures, I can't recommend you anything, as I didn't follow this subgenre in the last decade (I never liked Myst or any Myst-like game - I'm the typical LucasArts/Sierra/Westwood/RevolutionSoftware adventure gamer).

Same here, okr! Well, Sierra(/Dynamix)/Westwood/Lucasarts. I found it really hard to recommend something Myst-like, and that was the only game I'd played out of the ones mentioned above. (I do want to give Syberia and Atlantis a try though.)
I thought Jack Keane was interesting, but the main character felt too derived (Guybrush clone). The puzzles were unique and quite comical, but the setup for each puzzle was way too directed. The new Ankh games are great though. The humour and puzzles in the first game were all spot on. I particularly liked the flood puzzle and Assil's haphazard exit from the Sphinx.
Some DS buckets/bouquets for kirby007:
Operation Undercover: Dual Motives is a fantastic game for the DS that received a very poor translation. If you can get past that, it features an interesting story of sabotage/espionage set in WWII. You can play darts in it, and there's a hotspot trigger so you never have to go pixel hunting. I haven't played the matching Operation Wintersun for the PC :(.
Runaway 2 made it to the DS, but the port wasn't that great. It was a case of scaling the PC graphics down to a DS screen and offering zoom facilities. Not impressive. The heartbreaking thing was hearing the dev. team talk about how much time they spent on it.
And games I'm looking out for:
I want to play The Secret Files: Tunguska. It looks interesting and I'm thinking about getting the Wii version of it. The Whispered World looks like it's going to have a beautiful atmosphere to it. Two more games I'm hanging out for at the moment are So Blonde and SCG4AP.
Track down all the old lucasarts games and play them especially the monkey island games.
