Resident evil: umbrella chronicles is really good for multiplayer.
I also think Ghost squad is pretty good for multiplayer, since you can play with up to 4 players at once, on 16 difficulty settings.

Ghost Squad is great for the paradise mode alone.

Carnival Games is quite funwith 3/4 people.......any less than that and it gets boring. Give it a rent first though, some people don't like it.
Ho hum, Super Monkey Ball: Banana Blitz has a few good mini-games in there. Short of that I think they've all been listed.

You guys nailed the good ones. Try out Carnival Games, too. It's fun with a bunch of casual/ non-gamers. Worth renting, at least.
