Well, the two different game types have become incredibly hard to define. But here's a safe list:

Casual:

WarioWare

Mario & Sonic At The Olympic Games

Link's Crossbow Training

Core:

Super Mario Galaxy

Super Smash Bros. Brawl

Scarface or The Godfather (whichever movie you prefer, I suppose)

Metroid Prime 3

Resident Evil 4 (or Umbrella Chronicles if you've played RE4 many, many times)

House of the Dead 2 & 3 Return

Bully: Scholarship Edition

If can beat Ikaruga, you must try Trauma Center Second Opinion, Trauma Center New Blood and Fire Emblem Radiant Dawn on the hardest setting.
I recommend (core):

Zelda TP
Super Mario Galaxy
Metroid Prime 3
Resident Evil 4
Resident Evil UC, Ghost Squad or House of the Dead 2+3 (get only one of them)
Trauma Center SO
Fire Emblem RD
Zack and Wiki
Super Paper Mario

Casual:
Wario Ware
Wii Sports (it is the best casual multiplayer you will ever find)

Switch Godfather/Scarface with Fire Emblem and then you have a good list :P

I don't know his preference in games, so I tried to pick ones that are actually fun to play, which the majority of Fire Emblem games aren't.

Its pretty funny to see Wii owners define "Core" Wii games. I like the one that defines them as "Hard Core" and puts in Zack and Wiki.

Anywho, Super Mario Galaxy, Super Smash Bros, Metroid and Zelda are the ones that at least you know were made well. Zack and Wiki is fun if you can find it.

Thats all you need worry about, labels are un needed. Though I like the specific nature of your request.

I need exactly seven core games and exactly 3 casual!!

I own all three current consoles and a great gaming rig, now thats out of the way.
