60 stars and above and turns from moderate to intense imo
There were some stars which were definately easy to get, then there were others that were just so hard D=. Luigi's Purple Coins took me ages.
Believe me its not especially the god damn purple coins on the luigi's shaped thing. Oh gosh i still couldnt get that damn star.

at the begin it's very easy, then it gets harder, especially when you have to get those purple coins!! which was really fun!

We haven't finished this game yet (I say we because I always played it with my girlfriend). We have had 119 stars for a few months, didn't dare to complete Luigi's Purple Coins yet :P
The game is not easy at all, many of the levels will take a few tries to complete, and a few levels will take a heck of a lot of tries.
It's not as hard as, let's say, Ninja Gaiden... but do people expect every game to be as hard as Ninja Gaiden?

Its easy as hell compared to say Donkey Kong Arcade. But compared to today's games its no easier than anything else I've played. Games today are just easier than they used to be...but thats because back in the day challenge was one of the main gameplay mechanics in a way. There are a lot more options to use to keep people entertained while gaming. Thats not to say challenge isn't perhaps a bit underused today in some games but I don't think SMG is one of those games considering their stated goals.
I'd say this actually goes hand in hand with complaints that have been heard from people who whine about having to beat Trauma Center on Easy or not being able to win 150cc races in Mari Kart. Some people an irrational and selfish expectation that a game should be designed specifically for their skill level, and no higher or lower.
But why on earth would a developer want to design games this way? Would you want to exclude those who find your game too hard or too easy? Why cut off 2/3 of your potential sell base by targeting a narrow skill level? You want to have content which appeals to all skill levels so that your game can be enjoyed by as many people as possible. This is harder to do with some games than others. Some games can simply scale up the damage that enemies do or increase AI accuracy or aggression. Other games have to make some levels which might not appeal to high skill players and other levels which won't be completed by low skill players.
The moral of the story is don't be a whiny princess if a game has some content which is too hard or too easy for you. You only really have a right to bitch if all content in a game is designed for a particular skill level. And SMG is not one of those games. Anybody who claims it is has ADD and should be ignored.

It is easy only if compared to Mario Sunshine. The challenge in SMG is fair IMO.

I thought it was easier than Super Mario 64 (which I've yet to complete 100%), but it was still pretty challenging, Mario Kart Wii also seems a bit easier than other Mario Karts but is still a challenge nonetheless.

A lot of the galaxies are easy but there are also some very difficult ones like the purple coin challengers and sometimes the daredevil ones too.
