$249 GoW 500GB bundle would be my guess 

They are probably waiting for GoW to make a new bundle. I think no one expected SW to bomb this hard and have no longevity.

I think the 500GB will make a return. Sony just took advantage of PS4 demand to push the 1TB model with the higher profit margin. 

1tb hdds are cheaper to manufacture these days or so I heard.

Maybe. GoW should push hardware on its own so 300 GoW bundle would make sense. Sony seem happy with sales and momentum coming off the back of a 20M year. Maybe a 250 will be used later this year. Or a $250 500GB bundles and a $300 GoW 1TB. Horizon at this point would be more useful to push consoles without Sony losing much profit while GoW would be used to push the more profitable 1TB since it's a newer game and will be expected to bring home the bacon.
