I made this list because of baby versions of nearly every damn Mario character taking up spots meant for better characters.

I agree. Too many babies and metal characters. Your list of alternatives is very good and it should apply for party/sports games as well as Kart. Imo they should all be from the Mario universe and the only omission i can see from the list is Toadsworth.
