Red Steel 2 (So viscerally satisfying to cut down on screen enemies with energetic swings)

Medal of Honor Heroes 2 (Cool little touches like pumping the shotgun with the nunchuk or dialling in on enemies with the sniper rifle by rotating the Wiimote really added to the experience)

Wii Sports Resort (Playing the swordfighting minigame for the first time felt mind-blowingly futuristic in 2009, and still great fun today)

In all honesty, rail gun shooters like The Umbrella Chronicles were great fun.
