Skyrim, still the best.

Get Witcher 3 Complete edition. Hundreds of hours fun game. You will love it. And bloodborne. Awesome game.

Also, get Salt and Sanctuary.

For JRPGs, I would add Megadimension Neptunia VII.

If you liked dark souls 3 than Bloodborne is an obvious choice. The Witcher 3 and Divinity Original Sin enhanced edition are also great, although the latter has to be your taste. The Witcher 3 was my first Witcher game and I really enjoyed it after watching the cutscenes and reading a few background stories of the former entries.
