This is obviously going to happen. There probably will be different ones for the Super NES and maybe even N64 too. Along with fishing controller, Yokai controller, etc.

It wouldn't surprise me.  And if not them, I guarantee you that there will be a ton of Hori-made Joy Cons.  I mean, it's an obvious money maker to sell people more ergonomic Joy Cons.  Since many will not use the Grip but instead opt for a Pro, the Joy Cons will be purely for travel.
