I thought the original Splinter Cell looked amazing. Especially compared to the Gamecube and PS2 versions that came out later.
Ninja Gaiden Black has the benefit of being a good-looking game while also being fluent, frenetic and chaotic without ever toning down its graphical qualities. It deserves a special mention, because that game was an achievement in itself.
Chronicles of Riddick: Escape from Butcher Bay pretty much looks like an early seventh gen game (like Condemned), so that game should win by default.
Chronicles of Riddick: Escape from Butcher Bay for me ...
Not only were the graphics amazing but the scripting felt like it was on the verge of a new gen ...
haven't played chronicles of riddick but i wish i had now. Blood wake was gorgeous. Of the one's i played on that list I will give it to Ninja Gaiden Black.
The best game of it's genre still over a decade after it perfected it. Polished graphics on top.

Conker gets my vote.
I swear that game looks like an early Xbox 360 title. Best lighting and effects of the generation in my book.
