when released it was the final fantasy, the last game they were releasing before going bankrupt, them it became a franchise. And considering they are saving the world in each of the games, they could also keep the same because for each world that was a final fantasy.

The human race haven't gone sterile, but it is continuosly diminishing and will be finished in not so long. And I would say they call it the last of us because it's focused on the close family or even duo of the protagonist and seeing that they are the few that are still somewhat good it makes a lot of sense.
