It's Zelda's legend that you're learning about, it's her story.  The controllable character is simply the players "link" to the world.

A watch is also something you wear.

Yep yep yep... not everytime the main character is the one that name the game. And you explained it very simple and clear.

The human race haven't gone sterile, but it is continuosly diminishing and will be finished in not so long. And I would say they call it the last of us because it's focused on the close family or even duo of the protagonist and seeing that they are the few that are still somewhat good it makes a lot of sense.
