I always thought that holding the weapon with both hand while hanging the shield on the back should have been implied as a strong defense against backstabs. It doesn't make sense that backstabbing does as much damage even through the shield:

DSII had a ring and an armor effective against it. That's why I enjoyed DSII PvP much more than DS.

I didn't get that far into the pvp. Once I found out what soul memory did I was pretty pissed because it ruined a playthrough I was well into but I was still building up the character. It was before the dlc came out. Gear like that would be nice in DS3 though. They need to make the window for BSing smaller.

Demon's Souls... I mean Ive only played DS and BB so I cant judge DkS1 or 2 although DkS1 does seem to be the popular choice.

I'm halfway through in dark souls 2 (ps4 version) right now and I have to say, it is way too easy compare to dark souls 1 or bloodborne. Every time you leveled up, your HP goes up as well so you don't feel the need to level up vitality that much. Letting you carry 4 rings instead of 2 doesn't help at all. Bosses are too easy. Just equip a good shield and you are good. I still love the level design and being able to play the game at 60fps makes it more enjoyable. DS3 will probably not run at 60fps which is going to feel a step back in that sense.
