If they don't reuse the Zelda U assets and engine, they are going to need another four-five years to release a new Zelda (or even more, given that the tech allows for bigger and more complex worlds and mechanics). That would be really worrying, specially with all the delays Nintendo takes with Zelda. Fans would not like having only two Zelda games per decade, even if they try to fill the space with spinoffs and remakes.

True. But I guess that'll be the case.
Regarding the spin offs/remakes I think they aren't enough to please fans because honestly they are not that great. They are all solid atempts, but nothing groundbreaking. If they did a legimitimate spin off, with AAA aspect, I'm sure people would be satisfied and wait patiently. For one I'd love a spin off where you'd play as Princess Zelda, or even a hack n slash (in the soul of Platinum Games' games) featuring Impa mixed with some stealth mechanics.

I think a good option for Nintendo to avoid eight year gaps between mainline Zelda games is to outsource another company they trust to develop a AAA-quality Zelda game (maybe Platinum since Kamiya and Inaba did a pretty good Zelda clone in Okami) with supervision/quality-control from Aonuma and others at Nintendo while Aonuma and his team concurrently begin production on their own mainline Zelda that they could finish in 7-8 years. So if Zelda U were to come out this year, an outsourced Zelda could be released in 2020 and the next in-house Zelda in 2023. Also, Nintendo should really consider cooling down on Zelda and limiting its enteries in the next 5-8 years to one game every 1 1/2 - 2 years to avoid franchise fatigue. This generation alone, we've had eight releases in a five year span not counting Zelda U (Hyrule Warrors on Wii U and 3DS, Triforce Heroes, ALBW and high profile remakes/remasters of OoT, MM, WW and TP).
