I really need to get into this game have the WII version but might hold off for this version. The dungeon idea is the best use I've heard for Amiibo yet and here in Australia Amiibo are quite easy to come about here so it wont be hard to get either.

That's pure speculation on your part. It can be what you just said, a full lenght dungeon, a Boss Rush mode... We don't know. |
Hence the use of "might", not "will"!

But if I have to take a bet, I would say that this new dungeon will basically be like a "Cave of Ordeals" part 2 essentially. |
That would be awesome.

This is a time where the amiibo function doesn't make any sense. Why take some of that content and slap it on a figure that is bundled with the game? Doesn't make sense... It would be more understandable if it used figures outside of the series, like Mario, or Splatoon.

Well RIP to people expecting a full game if they buy it pre-owned or a version without the amiibo.

That's a little over the top. It's not fair to say that playing without one extra dungeon which wasn't even in the original game means it's not a "full" game. There's still plenty of content.
Anyway, my question now would be how this would transfer over to Zelda Wii U. Would the same dungeon appear in Zelda Wii U? Would it save the progress you made in this dungeon? So many unknowns...

You sound like Amiibo will unlock half of a game and not just one dungeon.
