Nintendo games were boundary pushing once upon a time. They're not anymore. They're generally very good releases fitting into pre-set templates of what needs to be in the game.
The NES classics were pretty much peerless. The SNES took these and expanded them massively. The N64 went 3D and again, in turn was offering things nobody had experienced before.
I get that we're at diminishing returns in what additional power now offers. But take Mario Kart for example, Mario Kart 64 was vastly different to Super Mario Kart, Mario Kart Double Dash then took it in the "party game" direction. However, since Mario Kart DS, it's like the franchise is now in a cookie cutter check list of what has to be present.
Maybe a big part of it is more that they are continuing to release sequels to their core franchises, even though there's not really much further they can go beyond shinier graphics?
Epic is me having my jaw on the floor having my mind blown by what is going on thinking "OMG this is incredible!". Granted that happens a lot less in gaming now than it used to. But Nintendo used to be notable for continually putting out such experiences. It's something that their last couple of consoles have all now failed to do. Is it a power thing? Maybe, but I'm not convinced. They are putting out high quality games. But they're not "epic" :p
