1 & 2 will likely be more difficult for you to get into. They're definitely dated but they're still brilliant games. If you want something that will be easier and more inline with what your friends are excited about, then you should probably start with 3. Then, maybe in the future you will want to go back and experience the first 2.
Fallout 2 is one of the best games ever made. But if you don't like turn based rpg combat you will probably not like it.

F3 for me is one of the best games of previous generation, and evan didn't know what Fallout was before.

Now, now, let's not be that harsh. Sure F3 is not as good as F1/2, but Bethesda at least tried to make proper Fallout game, alas they're just inherently incompetent when it comes to story and characters. NV is much better at that, but it suffers from other problems.
Then you have devs like CD that is very competent, but still decided to shit all over the legacy of Tomb Raider and made something that has nothing to do with original but name. So at least we have to give credit to Bethesda for trying to not piss off original fan base too much.
Okay, I'm interested. I think I'm going to try Fallout 3.

I'm the same way. Fallout 3 was the first game in a very long time, that just wowed me when i played it. I rarely keep going on playing games after i beat them, but with Fallout 3, i kept going on. I ended up putting almost 200 hours into it, including the expansions. Sometime i had alot of fun, just doing pretty much nothing but exploring.
Fallout 3 isn't a Fallout game, it's an Elder Scrolls game with a Fallout skin mod. Bethesda is hillariously bad with story, dialogues, characters and humour. And those things are exactly what makes a Fallout game.
Skip Fallout 3 unless you love Elder Scrolls.
