OoT overwolrd is as empty as TP, but unlike it, in OoT you can travel between areas faster than in TP. Also, in TP you can't call your horse until almost the end of the game, therefore you havo to travel around big empty wastelands to reach your destination or find a horse whistle. Finally, in OoT you have to get your horse, unlike TP where you start with she without any effort. Boring.
On the Ganon subject, tennis was only part of the battle, as you have to use your new weapon, the light arrows, alongside the mythical Master Sword. In TP it just easy tennis. Even that battle was dumbed down from the original version. Phantom Ganon in TWW is even more interesting than Zelda possesed in TP, a concept we already saw in PPTTYD with a better execution.
