Nintendo needs to wake up and realize that their strategy to increase demand is frustrating their consumers. If they keep on continuing handling the adapter, and Amiibo, situation like this it's going to hurt their brand.

Would it limit their sales? If a person needs more than one, they could ask a friend or family like you suggested. However, since scalpers tend to buy a lot more, they'll have a harder time asking up to 10-50 friends or family to help out.

To thwart the scalpers, just make more, Nintendo! What's stopping you? You sold them all in 10 minutes, obviously there's demand, so make more and more and more until scalpers stop buying them, then make more to ruin the scalpers' business. Do it, Nintendo! Seriously, do you not like money?

Try the pro controller, it's comfortable than the gamepad IMO, can't really compare it to the gamecube controller as I have not tried it yet.
