You can choose to show your real name to all or those who you accept real name requests from. It will always show it to yourself however.

PS4 UI is leaps and bounds ahead of the ps3. It is faster than the Xbox one interface, which is around the same speed as the 360 interface.
I haven't noticed it any faster than the Xbox One, but I need to fiddle around in it more.
The difference between it and the PS3 is astonishing though. Imho next gen is worth it alone just to upgrade UI's. They suck on both last gen consoles.
