In the first video she didn't have an item, not that it would have saved from the car, and in the second I aimed for her front for that exact reason!

I still see my red shells hover behind another player for an extra second or two before they actually do any damage.

Yeah, it's da lag! I've noticed that Red Shell thing aswell, though it's generally a non-issue.

It is lag. There were a couple of times where it said I was first place and all of a sudden I was second (without the second player passing by me) because it took a while for all the players to catch up.
Going by the video, the guy who played Rosalina got hit in real time, and by the time you finally caught up, she was already moving like nothing happened.

Actually I think I have noticed that as well. I finshed 3rd but them I suddenly jumped to 6th, or vice versa, cant quite remember.
