As others have pointed out, the developers themselves haven't pushed the console to its limits. Also X will be more taxing.
If it were pushing the hardware to the limits, then the game would struggle with the framerate. But it's not.
Again its the "limit" as in how many rocks fit into a container? How many stones? How much sand? How much water does fit into the space thats left after your filled the container with water etc?
We reached the rocks limit or something like that.

The only Wii U game that I find interesting or entertaining is Zelda: Wind Waker HD. Love that game! The HD is a welcome addition. :)
I think they said: in the way we are doing, we reached the limit, but there others way to do, that can be even better.
Lets see shinen work with its 4k textures promises.

But isn't the aliasing problem occuring because it's a low-resolution screenshot? And can't the road texture be explained by the fact it's a screenshot taken from a moving scene? I'm just saying that because we can't be sure about the graphical quality of the game if we don't analyse actual footage.
No. Games over the coming years will push it further. They're still getting acclimated. If they aren't even really struggling to get 60fps out of this game then visually it is not the peak software for the system.
