Too bad we've known since it's reveal that Mario Kart 8 is more like MK7 than any other, which is the best thing they coulda done! ^_^

2 Player Gran Pric Mode (MK64) - I don't play Mario Kart alone, and it's unfair that you need to play GP mode to unlock stuff.

Rear View Mirror (SMK) - Like you said, that would be epic.
