Personally, I'd suggest you try these three out before going into the rest of the spinoffs, starting with Mystic Quest. I actually love MQ a lot, it mixed some good action rpg elements (upgradable weapons, in-map actions, on screen enemies) with classic FF staples.
Also, leave Dirge of Cerberus to the very end, if possible. That aberration of a game can easily put off everyone from playing anything FF related for a long while
