So what do you think of this set up?

Uhh, I guess you are missing a discrete GPU.

And I don't think you need a Z87 chipset if you are not getting a K processor.

Without a proper GPU that computer will be useless as a gaming/studio rig (I'm assuming your "studio" as a "design studio")

You could go for a GeForce 760GTX

Without knowing the discrete GPU, I can't really say anything. That PSU is also overkill unless you plan to run 2 discrete GPU's in CrossFire or SLI.

The rEVOLution is not being televised

Well... you can get a GPU now but if you can wait till Q1 2014... you will get the next gen AMD/Nvidia GPU's. I suggest waiting only because Nvidia has become greedy imo for this year with the absence of AMD...

A 770 which basically performs about the same as a 680 (just a bit better) also costs as much as a 680 but usually in tradition.. it should cost less than a 680 because it is suppose to be the 680's replacement and a 780 which out performs a 680 should cost as much as a 680 and not about $200 more (give or take $50)

But if you can't wait then I suggest you get either a 770 if you can afford it or a 760... Or if you like AMD which does cost cheaper but doesn't have the performance of the 700 series... I say go with 7870 x2 (you can find them on sale easy) or a single 7950

Studio as in Video or Music editing/creation etc? What software will it use specifically? It might actually be wiser to go Socket 2011 depending on how demanding it is and throw some overclocking at the performance problem, combined with double the amount of Ram.

Also, what kind of Monitor will this machine be using? It's all well and good to run multiple GPU's, but if you are only going to be gaming at 1920x1080 (1080P), then it's going to be a waste.

Y U NO HAVE REAL GPU!?
that's my only issue with the rig tbh.
throw in a HD 7790 or 7850 with that and you'll be good. those cards are good bang for your buck.. not state of the art, but the rest of the rig isn't so it won't matter.
perhaps downscale your PSU too 850W is ALOT.. without a GPU you prob. aren't using more than 1/4'th of it

You don't really need a blu-ray Drive. You can get a DVD drive and save ~35 bucks. I have one and don't use it at all.

Unless ofcourse you want to watch blu-rays on computer. I could be wrong but I don't know of any software that ships on Blu-ray. It's all Digital Distribution or DVD's and doesn't seem to be progressing to a point where they'll use Blu-rays for anything other than movies in the near future.
