I thought the first video did a very good job of looking like the woman but in a cartoony way.
The second video it was clear that the Kinect Unity or the Kinect sports was glitching because it would not for a long time bring up the map of the guys face. This is to be expected as the software is unfinished. Also the guy demoing clearly did not believe the results would be good as he stated before the finished results.
The third video seems to do exactly what its suppose to do so do not see any issue with it. Its not trying to be an exact image of the person as ugly people probably do not want that so Rare on the software side is adjusting the image and probably have certain templates to clean up the representation.
Magic with hardware is realize in software. Since Rare has 8 months before rivals release their will be plenty of time for them to work out the kinks.
