And I tell you the same as Slade; Dark Souls 2 is the most accessible Souls to date. It's not easy, but it's not punishingly hard either. I'd say you should give it a try.

There's a lot to enjoy in the Souls games, other than the difficulty. The lore, the superb dungeon design, the diverse gameplay and the kickass OST among those.

If you go with your expectations lower since nothing will top Dark Souls (and this game borrowed the worse elements from Demon's Souls and from Dark Souls and mix them together), DS2 will prove to be an extremely enjoyable game too.

I have a friend who says Demon Souls might make you cry because of its difficulty. I was wondering what would happen is cloud ai was enabled for souls game and each monster learns from players moves and gets better I mean  the later you play the game the more frustrating it gets. With cloud ai Souls would go nuts in its difficulty level.
