Dammit, so many Bond movies come to mind!
Either Casino Royale, Die Another Day, or Goldeneye (The bungee jump, then you see a goon smoking. Making his entrance, Bond kills him, the cigarette falls to the ground, Bond says 'filthy habit!')
i liked the opening scene of swordfish a lot.
also, if anyone has seen it: irreversible.

Not so much the opening scene, But with Sernity, (Love that Movie), Whan they first go inside the ship, that whole opening credits sene, which goes for like 5 minutes, is one fluid shot, no editing, nothing... Just one 5 minute opening credits shot following the captain all over the ship talking with his crew... flippen awsome camera work and directing for that one!
It's me... no really, it IS me!!!
Xmen-2
Maybe there is a better one, but I can't remenber
The Two Towers, Raiders of the lost Ark, Star Wars Ep4, Saving Private Ryan.

Final Destination 2. Certainly not the best opening, but it was very cool, specially when you have a nice sound system!

Actually, there is one cut, but it's a very clever one. The shot is mostly fluid. At one point when Simon is talking to Mal, the camera moves quickly from Mal to Simon and the shot is so smooth that you can't tell it's a cut, which is awesome. They had to change the scenery when moving from the cabin of the ship to the deck with the Skid. They have a documentary about it on the DVD, watch it if you get the chance. Love the film.
@faxanadu
Yeah, Swordfish did have an awesome opening, first Travolta giving a speech, then the whole ball-bearing explosion Matrix-esque rotation scene. Wooooooo!

Hmm.... there are a lot of great opening moments in movies. I'd say a tie between these for me:
Jaws... Raiders... X-men 2... Star Wars (before they got numbers)...
I'm thinking 'grab you' openings of course.
My two personal favourites are:
Blade Runner and 2001 (in a cinema with a very large screen).
Try to be reasonable... its easier than you think...
