Mikael Akerfeldt of Opeth. Saw a live show of theirs with an ex bf and OMG mind blown, for skill alone i've personally never seen anything like it.

Personal favourite for sound is Adam Jones of Tool, His atmospherics are a treat every single show.

Jerry Garcia. Not the most technically proficient or imaginative guitarist, but one who was a master of listening and reacting to his band, and never overplaying. His work on the pedal steel guitar is especially good. "Teach Your Children" would have been far less beautiful without him.
