India and China would be my favorites as well, however after the bore fest of ac3 maybe it's time for a complete overhaul and a new series. Get rid of the whole Desmond angle and make something like Jade Empire instead.

This should have been choosen as AC3 setting instead of the American Revolution period. There is so much potential in terms of gameplay oportunities to be explored in medieval China.
