It's pretty impossible for me to answer this because there's just so much, but I will say that my favorite music within the context of the game is that hilarious guitar-heavy j-rock that plays during boss fights in Blue Dragon.

Pretty much any Metal Gear Solid. Uncharted games have a great score too, as does Batman AC.

Really old game by japanese company Nihon Falcom, The pc engine version of Ys is probably the best rendition of the soundtrack and the game just has consistently great music pieces imo..
