This is a really good topic :)
I'm going to work in % terms - anything else isn't really that fair.
...
In terms of greatest falls (%), I have my order like this:
PS2 > PS3 > 360 > PSP > DS > Wii
PS2 loses out, being a pure legacy console. Its only being purchased as a "cheaper" Xmas gift at the moment.
PS3 / 360 are pretty close - and I could have the order the other way around. Depends on whether PS3 sales in Europe fall off quicker than 360 sales in the US do.
Next I have the PSP, as I think the new hardware will carry *some* momentum into the new year. More than the consoles anyway.
I have the DS next, as I think its *slightly* supply constrained - and should fall less than the PSP in terms of %. However, this could actually be wrong - it could be the bigger of the Xmas gifts, and have a bigger % fall post Xmas.
The Wii should be an easy last (i.e. least % fall). Its heavily supply constrained, and I think a lot of people will try and pick one up now that the Xmas rush is over. Having Brawl hit in only a few weeks (Japan anyway) doesn't hurt either.
It may well end up like:
PS2 > DS > PSP > 360 > PS3 > Wii (or something like that!)
