hmmm, I started with Meruru but that's the third of the Arland trilogy.
Arland trilogy: Rorona, Totori and then Meruru
Dusk series: Ayesha and coming soon Escha & Logy
I'd say start with the Arland trilogy but if you want to play them in order I'd tell you to wait for the Rorona remake that will likely release this year.
If you dont mind whether it's ps3 or vita i'd recommend getting Ayesha and then getting Escha & Logy this March cause that's gonna be a major turn in quality for the series.

I picked up DOA5+ the other day from ShopTo. I don't generally enjoy Beat Em Ups as I'm so bad at them, but thought it'd be pretty nostalgic from my time on DOA2 on the Dreamcast.
Damn it's actually a LOT of fun! working my way through the story mode at the moment. Up to about level 25 on it. The combat is really smooth and works great on the Vita. The visuals are actually stunning in places.
I really can't wait to see Tecmo-Koei's future projects based on how well Team Ninja have got to grips with the system (comparing this to Ninja Gaiden). Really looking forward to Toukiden in Feb and may grab Ninja Gaiden 2 in the meantime.

But if Vita keeps getting all these 3DS exclusives, there'll be no point buying a 3DS because once a game is on another platform it doesn't exist!

It does look pretty stunning, I'll agree with that. Really smooth and characters/environments look great, aside from the odd hiccup (i.e. character's hands are really weird).
But man, the "story" in that game pissed me off. Considering it's the first multi-plat release since DOA2, I really think they should've done more to simplify things than they did. Going from character to character getting into scraps just made no sense to me, and the stuff towards the end with Ryu & Kasumi just confused the hell out of me. I don't think I even understood what happened.
I think I'd have preferred a more traditional approach where you can play through each character's storyline separately and see their version of events, rather than seeing the whole storyline told piece-by-piece through each character.
S'part of the reason I traded it in. I'll just cross my fingers and hope that Tekken Vita comes sooner rather than later.
