Home-made Pizza -makes 2 pizzas

Flour,white or wholemeal. (1 pound)

Salt (one tea spoon)

Yeast (one packet/sachet thing)

Olive oil (3 table spoons plus a little extra for cooking with.)

Lukewarm water

Garlic (one clove)

Tomato Purée (one big packet should be enough)

Herbs ( Oregano, Marjoram and Basil)

Balsamic vinegar (optional)

Make sure you have Pizza trays (those thin dishes you put them on in the oven.) 

 

 

Weigh flour and put in bowl.

Add salt,stir in.

Now add yeast,again stir thoroughly

Next you pour out 3 tablespoons of olive oil and put in the bowl with the rest of the stuff.Add lukewarm water to flour and stir.Make sure that the dough is of a good consistency ( fairly sticky so that it is all together but not too wet.should have a bit of loose flower on the outside.)

Wet a tea-towel and place on top of the bowl containing dough.Leave for about an hour,in which time the dough should have risen up.

While the dough is rising,crush a clove of garlic.

Put some olive oil into a pot,heat up and add crushed garlic.

Now add tomato puree and sprinkle the herbs on top.Add some balsamic vinegar to taste.

Leave the tomato sauce so it is warm.

Separate into two blobs of dough and roll them out onto pizza baking tray thingys. Now pour tomato sauce onto dough and add toppings...place into oven at 250 degrees and they should take a few minutes each...enjoy! :)

Grilled Spam ala Too lazy to make Ramen

Put stove on medium

Place Spam slice or a Spam single on a pan with a spatula

Wait and check until one side is golden brown

Flip with the spatula

Wait and check for that side is golden brown

Turn off stove and move pan to unused burner

Put Spam on plate

Wash pan out

Add bread or tuna if desired

Enjoy

Notes: Do not look directly over the pan, it pops out. Also, you may want to slice the Spam if canned under half an inch. It heats up inside better.

Dark Lord's Lamb Chop Feast

Ingredient:

Lamb Chops -- 2 (250 kg)

Knorr Lamb Stock Bubes -- 1 (split into a 3/4 piece and a 1/4 piece)

Olive Oil 

Rosemary

Fish Sauce -- Optional...only use if you want a "very rich/strong" sauce

Double Cream 

Water

Method:

1. Use 1 Tsp of Olive oil and 3/4 of the lamb stock cube and mix them together into a paste

2. Make holes in your lamb cutlets, not too many.

3. Marinade the paste on the lamb cutlets, leave for a few minutes

4. Put 2 Tbsp of olive oil in pan and cook the lamb cutlets in it

5. Should take 6 - 8 minutes to cook. Turn over frequently during that period.

6. Take lamb cutlets out of pan and drain oil off

7. Put 350 ml water in that same pan and heat to a very high temperature. Add the remaining 1/4 of the lamb stock cube and bring to boil. 

8. Once half the water has evaporated ad 1/2 tsp Fish Sauce and 1 tsp double cream. Mix and keep boiling.

9. Keep on boil for 3 more minutes, the pan should have a semi thick sauce in it now. If you want a thicker sauce, add corn flour.

10. Pour sauce over lamb cutlets and ENJOY!

*You are advised to eat it with salad.

Maccheroni al forno.  (macaroni au gratin)

Ingredients:

  • Pasta (macaroni or "penne" or "tortiglioni" or "ziti") 500g
  • Grated Parmigiano Reggiano cheese 225 to 325g (most probably the original recipe used some Southern Italy hard cheese instead)
  • Fresh tomatoes: enough to cover the bottom of the baking  pan with them cut in halves and hollowed
  • Fresh or canned peeled tomatoes: enough to cover the top
  • Breadcrumbs: enough to cover the top
  • Extra virgin olive oil
  • Oregano
  • Pepper (optional)
  • Salt

Instructions:

Boil the pasta in salted water half(*) of its suggested cooking time.

Season it with abundant extra virgin olive oil and 200-300g cheese.

Put a layer of not peeled fresh tomatoes, cut in halves, hollowed and gently flattened, on the bottom of a baking pan ~8-10cm tall and ~30cm large. The skin must be on the bottom, touch the pan.

Add all the seasoned pasta in one layer.

Cover with a layer of drained canned peeled tomatoes or fresh peeled tomatoes cut in halves and hollowed. To easily peel fresh tomatoes, you can shortly dip them in boiling water or freeze them and dip them in lukewarm water until the peel is defrosted and you feel you can separe it easily rubbing it with your fingers.

Season the breadcrumbs with oregano, pepper if you want, 25g grated cheese and also a little salt if you are using unsalted Tuscan bread. Spread this mix on top of all. Drizzle with extra virgin olive oil.

Put in the oven, 180-220°C (356-428°F) if traditional, lower if fan-assisted (not recommended), until the bread is golden brown and the pasta on the sides and bottom is golden brown and quite crispy and the tomatoes on the bottom are very cooked (only when they have lost a lot of water the pasta on the bottom starts becoming crispy

If when the breadcrumbs are toasted as desired the pasta on the sides and bottom are't as crispy as you like, cook some more time at less than 180°C (356°F) with only the bottom resistances turned on (if you have a fan-assisted oven without traditional fanless functioning option, you'll have to put the pan on the stove instead, to avoid  burning the bread).

Cut and Eat. Most prefer this dish cooled down to lukewarm or even room temperature, as it gets firmer, as a cake, and it's also easier to slice.

(*) Important: if boiled too long, pasta will absorb too much water, that added to the juices released by tomatoes will make so that it will take a time awfully long to get the bottom crispy.
