Okay, instead of giving you one giant list of games, I'm going to be a jerk and recommend my Wii Recommendation Guide. You can find it stickied here on the Nintendo page or in my Signature. It's got a whole buncha games ready to be played.

And yes, Silent Hill: Shattered memories is good. Actually, I may go as far as to say it's great.

Honestly, anything from my collection will work...

Top picks based on your "collection" which doesn't seem complete at all, so most of it is arbitrary. I know you got rid of the Wii after Brawl, so I'll try to suggest newer games. All of the games fit your description of being "traditional core gamer games with polish/style and some dificulty"

• Super Mario Galaxy 2 (&1) (I think 2 is better, my brother actually thinks 1 is better. Getting all the stars in 2 gives for a great challenge)
• New Super Mario Bros. Wii  - Best 2D platformer probably ever, unless you are butt hurt because Nintendo can't program skirt physics.
• Punch-Out!! - if you liked either the NES or SNES versions you'll love this. While the first half the game is very much like the NES original, the second half is a lot harder. Plus they have a hidden character for the best players.
• Geometry Wars: Galaxies- If you like SHMUPs this is a good game and cheap too.
• Trauma Team - haven't played it (still trying to get my brother to buy it since he got gift money specifically for this game and I lend him enough games already) but based on the previous games in the series this game is hard and fun. I've seen a lot of good reviews for it. Storyline is cheasy, but the gameplay is fun and unique.
• Little King's Story - If you liked pikmen at all (or simple real time strategy games) this is a good game. It has it's flaws (lack of pointer control), but the art style is great and the gameplay is good. So far I'm really liking this and I've beaten 1 of the 7 kings. It has it's hard moments too on normal setting.

I'm in the middle fo something else, but since you mentioned some difficulty (and if I recall correctly it has polish), Sin and Punishment 2.

SIlent Hill is great imo, just be prepared to run, there's no fighting in the game.

I know. Civ games destroy my buying habits. It really doesn't matter what game comes out. If I have civ I'm not buying it. 

Except that right now I'm on SCII. And very addicted.

Muramasa is really enjoyable.

I need to get that Silent Hill game as well.

I loved Silent Hill, but if you want the same Silent Hill as ever, avoid it. Still one of the best third party games for Wii.

Anyway, I just want a nice silent hill game. It doesn't have to be like the others and I know it's changed a lot, but just as long as it's nothing like homecoming, I'm cool

I didn't played Homecoming, but this one is very different from the others. It makes excellent use of the WiiMote and the graphics and music are great. Is a short game but with multiple endings. There's a review here at VGChartz, look for it and read some of the comments. Noname made some good comments you should consider to know what you're getting.

But if you like "exploring" in your games, I think you'll like it.

Muramasa is a good choice. Really loved that game.

Please look up Fragile Dreams and Sakura Wars! They may not be the most polished games ever but they're great anyway!
