What did they cut from Azkaban? I can think of a few alterations, but that's about it (like Harry seeing the Grim in the sky rather than seeing Sirius in the stands at the Quidditch match, which is a fairly nonsensical change).
Azkaban is by and large considered to be the best film in the series. It has such a grim, haunting atmosphere, excellent pacing, and it covers all the primary plot points perfectly.
None of the other films stayed as true to the source material while also providing such an exciting experience near as well as Azkaban.
The Goblet of Fire was damn near an incoherent mess because they tried to cram so much into so little time, the Order of the Pheonix felt like the Sparknotes version of the book, and they still managed to leave out entire plotlines (Dobby, etc.), and in the Half-blood Prince they not only removed numerous parts (half the relevant Voldemort memories) but somehow found the time to add in other completely made up stuff like the burning of the Burrow.
My biggest issue with 4/5 was how weakly they built up Harry and Sirius's relationship, culminating in a five second death scene at the end Pheonix. They did such an injustice to one of my favorite characters, especailly considering they built him up so well in Azkaban.
