There is a question of whether we are more or less limited by having a controller or not. There are a wide range of games that are NOT the same using the PS3 or 360 pad controllers, that having no controller would be an advantage over.

It's all in the design.
If developers want to come up with something original that can only be done on a controllerless interface (or simply isn't fun or interesting with a standard controller), then you could have a potential selling point for Natal.
While there are plenty of limitations to standard interfaces (pad, joystick, mouse keyboard, whatever), the trick is using camera recognition controls to overcome those limitations in really clever and innovative ways.
So there's a lot of potential for failure here too once you get past the whole initial impact of "hey I'm not using a controller and my character is responding!" and gradually shift into "hey this game would sure be a lot easier to play if I could use a gamepad."
If the game would work well with a standard interface, then you're already teetering on the edge of using camera tracking controls as a novelty. We'll see what they come up with at this year's E3. Hopefully it will be more of column A and less of column B.
