Another vote for Wind Waker. Games with cartoony graphics in general from those older gens of 3D consoles have always aged better than most game aiming for "realistic" visuals. So many games from those days were eyesores even back then, but the ones with a good, stylized art style hold up much, much better.

I also think Halo CE holds up well for the most part, again because of its art style. It's definitely showing its age, particularly with human character models, but the environmental art still looks great today, and it does cool things like copious particle effects (with actual physics!) and blood & bullet hole/plasma scoring decals that persisted, things that later games seemed to struggle with a lot even within just the Halo series.

Also, some fighting games like Soul Calibur and DOA3 still look fairly solid.
