I'm lock-step with you on everything except the bolded. Don't get me wrong, I've firmly been in the camp of wanting a new game to be in the vein of SF and SF64 without gimmicks and gameplay modes that could potentially ruin the experience, but after thinking about it for a while, I think it could work for Star Fox.
I've been playing a ton of Teenage Mutant Ninja Turtles: Splintered Fate both solo and with friends for the past month or so and really enjoying it. I'm told that it's basically Hades but with TMNT, so I see why people love Hades. It also reminds me of Vampire Survivor in several ways. Both of those games are tremendously popular.
I can absolutely see a Star Fox game with a gameplay loop that works in the Rogue-like style now. Fly into a stage, clear out a section or a wave, or complete an objective, get your rewards for that section/wave/objective, keep going until you can't. Rewards can be in the form of temporary power-ups, power-ups that last throughout that run, and currency for permanent power-ups. Runs can either have you going through (or getting as far as you can) the entire story mode like TMNT:SF or classic Star Fox, or for more stages, variety and value proposition, make it like Star Fox 2 where you revisit areas and unlock new things as you progress the game, like new routes, new bosses, new scenarios and so on. Also make it like Star Fox 2/DS in the form of different pilots and vehicles to choose from; I love your idea of incorporating the landmaster and submarine for more variety.
Whenever we talk about a new, modern Star Fox on these forums over the years, the number one people object to a new game is "Star Fox doesn't work for modern gaming sensibilities because it's too short and isn't worth a full price tag". Well this is one way to add several dozens (hundreds for some) hours of gameplay for modern gaming sensibilities.
