Someone once told me that there should be a Kirby RPG, but that seems a little too obvious.
Maybe a Donkey Kong third person shooter that brings back the fruit shooting weapons from Donkey Kong 64.
Although it may be easier to build a revival of Donkey Kong Racing using the Bananza engine, specifically the Rambi Racing section but with much better controls.
