Optimizing is one thing. Working from the ground up and creating new content is a very different story. DQXIS was a special case and easily the biggest effort we have ever seen in bringing an 8th gen game to the Switch. By quite a margin. 

This doesn't mean Rebirth can't get a competent version on Switch 2 that is well optimized. I just say that I don't think SE would do the kind of effort we saw on DQXIS just for the fun of it

DQ11 on Switch is extensively reworked, but I wouldn't agree it's a remake. Most of the changes are still the usual techniques like simplifying polygon meshes, lowering texture and shadow resolution, disabling screen space reflections, reigning in draw distance and grass density, etc.

It definitely got a lot more care and effort put into it than most ports, but it is still just that, a port.

As far as how extensively they'll tweak Rebirth, I guess we'll just have to wait and see. Hopefully they put in the effort to deliver a quality conversion.

It has new content, new story beats, an orchestrated soundtrack, the whole 2D mode with exclusive missions, gameplay tweeks and quality of life stuff.

It may not be strictly a remake, but it's definitely far beyond what any third party port has done on the Switch.
