These days, developers optimize their games right up to release day via day 1 patches. (And often beyond) Many of these games are not out for months yet, and we don't know how old the demo builds are.

Something like Elden Ring could (and hopefully will) be in better shape by the time it's in our hands.

If Remake is really running at 40 fps at a good resolution then there is no excuse for Elden to be 20 fps.  Hopefully there is a patch.  

And Hopefully Snake Eater's day patch helps the ps5 as well.  

I don't like day 1 patches but they are part of life now.  

Not making excuses for it, just saying it's a bit early to write it off entirely. I wouldn't be surprised if it did still perform poorly at launch given the game itself is something of a technical mess, (as per usual for From Software's games) just saying that pre-release builds aren't necessarily indicative of the final product.
