I've found a strange looking actor whose hair we could dye BRIGHT red, feed him steroids and exercise so he gains about 5 stone... We could and make it happen. He's best known as one of the stars in HBO's Girls, co-starring in Frances Ha and some of the newer Star Wars films.
Either that, or hire legendary villain method actor Rafe Fiennes (best known for the Nazi Amon Gǒth, the Red Dragon Francis Dolarhyde, Hades, and the pervert wizard Lord Voldemort) who already did the "gain lots of muscle" part while aging himself into his 60s (the things method actors do!):
